Salmon Topped with Avocado Salsa


I just finished eating this meal and could not wait to share it because it was SO good. Most recipes take me a pretty long time to make because I'm a slow chopper and am not the best multitasker in the kitchen, but this recipe is a different story. It was so quick and easy to make, and the flavor was out of this world even though it's super healthy with only a few ingredients.

This meal is gluten free, high on protein and vitamins, and perfect for those of you looking to clean up your diet or find a perfect post-workout dinner. 

Ingredients:
-2 filets of salmon
-1 bunch of asparagus
-1 avocado
-1/4 of a red onion
-1 tbs of fresh cilantro
-1/2 lime
-1/2 lemon
-1/2 tbs grated parmesan
-1 tbs of olive oil
-Pam
-1 tbs of Badia Fajita Seasoning
-Pinch of salt and pepper

Directions:
-Preheat oven to 350° and heat up grill (I used a George Forman) 
-Season salmon filets with a pinch of salt and pepper and sprinkle on roughly 1/2 of a tbs of the fajita seasoning on each filet (or until a light coat covers the entire filet)
-Chop off the bottom 2 inches of the asparagus and toss it with 1 tbs of olive oil, 1/2 of a lemon's juice, and a pinch of salt and pepper
-Once the oven and grill are heated, put a pan with the asparagus in the oven and put the salmon on the grill after spraying it with Pam
-While the asparagus and salmon are cooking, chop up the avocado, onion and cilantro and mix them together in a bowl
-Squeeze the 1/2 lime over the avocado and sprinkle salt and pepper on top, then mix again
-After about 10 minutes, or until the salmon is cooked to your liking, take the salmon off the grill and the asparagus out of the oven
-Place the salmon and asparagus on a plate, scoop the avocado salsa on top of the salmon, and sprinkle parmesan over the asparagus
-Take a few moments to admire the beauty of this meal and then enjoy!
