Turkey Lettuce Wrap "Tacos"

This is one of my favorite recipes to make because not only does it taste amazing, but it is also so easy. Even people who burn their toast can make this meal! These tacos are perfect for lunch or a light dinner. They're also ideal for anyone on a diet who doesn't want to give up flavor in their meals.


I originally made this meal with Pace Mild Salsa (which is also delicious) but I found it even better when I traded in the Pace for Stonewall Kitchen's Spicy Tomato Salsa. I found this salsa in downtown Pinehurst, NC at the Village Wine Shop, which is one of my favorite stores in town. If you ever happen to be in the Pinehurst area, I highly recommend stopping in this quaint little shop. It offers a variety of wines from around the world, wine accessories, treats, and even hosts weekly wine tastings.

Now back to the recipe...cheap, easy and tasty-what more do you need? It takes roughly 20 minutes to prepare and 3 lettuce wrap tacos is about 250 calories (300 with 2 tablespoons of holy guacamole). Yes you read that correctly! So low on calories. If you're in disbelief that anything that low on calories could taste good I challenge you to make it for yourself.

Ingredients:
-1 package of ground turkey
-1/2 of a yellow onion
-1/4 cup of Kraft Mexican Blend shredded cheese
-1/2 tablespoon of Badia Fajita Seasoning
-Pinch of Sea Salt, Garlic Salt, and Pepper
-1 Head of Lettuce
-3/4 cup of Medium Pace Salsa or Stonewall Kitchen's Spicy Tomato Salsa salsa
-2 Tbs of Holy Guacamole


Directions:
1. Dice the 1/2 onion and brown in a pan with a tablespoon of olive oil
2. Let onions cook for 2 minutes and then add in the ground turkey. Cover the pan and let cook. Stir the turkey every 2-3 minutes until the majority is browned
3. Coat the turkey and onion combo with the seasonings
4. Once the turkey is cooked through sprinkle the shredded cheese on top and cover the pan until melted
5. Add salsa into the pan and stir in until the turkey is coated. Allow enough time on the stove for the salsa to warm
6. Once the salsa is warm, the taco meat is ready! Fill your lettuce or taco shells with the meat and top with Holy Guacamole if you want even more flavor
